Hijiri Hizirizm SAVAGE Kimoto Junmai Daiginjo Namazake is brewed using Hitomebore, a table rice cultivated in Gunma Prefecture, and makes its return with the brewery's newly redesigned Hizirizm label. First introduced in 2018 as an experimental release showcasing the brewery's innovative spirit, it quickly gained a devoted following and has since become one of Hijiri's signature expressions. Brewed with koji rice polished to 35% and kake rice polished to 50%, this exceptional release combines the refinement of Junmai Daiginjo with the depth and complexity of the traditional Kimoto brewing method, fermented using the renowned Kyokai No. 7 yeast.
