Crafted using Akita-grown sake rice “Misato Nishiki,” this sake layers rich umami and gentle sweetness, tightened by a crisp, refreshing finish that brings clarity to the overall profile. While retaining the freshness characteristic of new sake, it invites slow appreciation and shows excellent balance, making it an outstanding food-pairing sake. Enjoyed alongside seasonal ingredients, its flavors shine even more vividly.

The first release of Harukasumi’s Reiwa 7 Junmai new sake is here!

The label design features Mount Chokai, visible in the distance from the brewery’s home in Misato Town, depicting a winter scene rich in Akita character.

Harukasumi upholds a philosophy of meticulous care—“one brew at a time”—devoting full attention to every batch. In recent years, small-scale brewing of around 1,000 kg per batch has increased. Koji is made using the box-koji method, and after pressing, the sake is bottled and aged for storage. Although the process is complex and labor-intensive, the goal remains consistent: to brew gentle, food-friendly sake. Another rare feature within Akita Prefecture is that all brewers are local residents of Misato Town, and in summer they personally engage in rice cultivation, participating in sake brewing from the very source.
