After maturing throughout the summer, this sake develops a calm and gentle aroma, with a rounded and smooth texture on the palate. Rich rice umami blends naturally with lively acidity, creating a soft and pleasantly matured flavor profile. Although light and refreshing overall, it retains the solid structure and depth characteristic of Buyu, making it an excellent accompaniment to a wide variety of seasonal autumn dishes. The name “Collection” signifies “a carefully selected sake of exceptional value,” encapsulating Buyu’s emphasis on maturation and rice-derived umami in this distinctly autumnal hiyaoroshi expression.
“Buyu Collection Hiyaoroshi” is a Junmai Ginjo from Buyu, a traditional brewery founded in Yuki City, Ibaraki Prefecture, during the late Edo period. The sake is slowly matured in the brewery’s traditional earthen-walled storehouse, which has been preserved since its early days. Buyu has long pursued a brewing philosophy centered on fully expressing the natural umami of rice. Through minimal filtration and careful maturation, the sake is allowed to develop its flavors naturally, resulting in an unpretentious yet deeply satisfying style that remains enjoyable without becoming heavy or tiring on the palate.
