When served with hot water, the sweet potato’s rich umami and aroma bloom warmly. Pouring it into a cup releases a dense “imo” fragrance, yet at the same time a pleasant aroma reminiscent of freshly steamed sweet potatoes. On the palate, the rich umami spreads through the mouth, followed by gentle layers of sweetness. It goes down smoothly with a round texture, and the umami glides naturally, finishing clean. The brewer recommends hot water as the best serving style to fully enjoy the sweet potato’s aroma and depth.
The name “Asazukuyo” evokes the image of farmers harvesting freshly dug sweet potatoes in the early morning, when the sky is not yet bright and the moon still lingers. Crafted with freshly harvested “Kogane Sengan” sweet potatoes from southern Satsuma, this honkaku shochu is made with black koji and completed using a coarse filtration method, reflecting a spirit of diligence and sincerity.
