Kuronotori—The character “Kuro”symbolizes profundity and mystery. This sake is defined by its robust umami and deep, lingering finish. With a powerful structure and restrained yet refined acidity, it evokes the composed presence of dark fruits such as black plums and blackberries. The palate is taut yet expressive, creating excellent harmony when paired with braised dishes, meat courses, or rich sauces.

Hinotori (Scarlet)—The character “Hi”represents vivid red and passion. The sake radiates bright red berry aromas, reminiscent of raspberries and red currants, with a lively sweet-sour impression. The palate is light, vibrant, and elegant, showcasing pronounced acidity balanced with gentle sweetness, expressing a spirited and passionate character. Released by Aramasa Shuzo in Akita Prefecture as part of the special June 2025 edition of the “Ultimate Hinotori Compendium” series, this installment features Kuronotori and Hinotori. While both share the same Hinotori worldview, they reveal distinctly contrasting personalities.
