Upon opening, a faint effervescence can be felt. The entry is marked by a gentle sweetness, accompanied by notes reminiscent of tart berries or green apples. With its low alcohol content, the texture is soft, presenting a light-bodied sake where fleeting, delicate sweetness merges with a transparent and graceful umami. This is followed by a lively acidity and a touch of bitterness, creating a sharp and firm impression. While spiciness is not pronounced, the overall profile remains distinctly dry. Smooth to swallow, it leaves an exceptionally clear and elegant finish.

This is a Junmai Ginjo crafted in a 21st-century style, recommended not to be over-chilled in order to fully appreciate its refined balance. The sake is entirely bottle-matured, consistently stored at -5°C until shipment, unfiltered and undiluted. Unlike previous expressions from Nagurayama, this release emphasizes acidity alongside sweetness, resulting in a distinctly modern design of flavor.

Brewed with Fukushima-grown Yume no Ka rice polished to 55%, it also employs shiro-koji (white koji) in its fermentation. While most sake is brewed with ki-koji (yellow koji), white koji is typically used in authentic shochu production, lending this sake a unique character.
