This first-press Junmai Ginjo Nama Genshu is brewed exclusively from Ginnosei sake rice. For this vintage, the polishing ratio has been adjusted from 50% to 55%, allowing for greater expression of the rice's natural umami and character. Since its introduction, Ginnosei has been widely regarded as an ideal match for AK-1 (Akita Hana Yeast), and it played a significant role in bringing attention to Akita sake during the early Heisei era. Today, it remains one of the prefecture's most representative and respected sake rice varieties.
