From the emerging brewery “Utashiro” on Sado Island, Niigata, comes the limited release “Ryuo Namazake.” This is an evolved version of the once-popular “Ouroboros,” brewed using locally grown rice from Sado. Crafted in a kijoshu style, it uniquely replaces brewing water with 19-year-aged sake. Unlike typical kijoshu, which tend to be intensely sweet, this sake intentionally lowers both sweetness and alcohol content to pursue a “light kijoshu” style—retaining richness while expressing Utashiro’s signature clean and agile finish.
