This Junmai Ginjo is brewed using “Hitachinishiki,” the only sake-brewing rice variety from Ibaraki Prefecture, combined with Ogawa yeast, Marufuku Moyashi koji, and underground water from the Tsukuba mountain water system. The brewery insists on using only Ibaraki-grown ingredients, showcasing strong local character.
