This sake uses naturally produced gentle effervescence and a slightly lower alcohol level to create a clean and crisp profile. Although light in style, the full umami and long tail characteristic of Omachi rice remain clearly expressed.
For food pairing, it works exceptionally well with dishes featuring spices or herbs, as well as olive-oil-based dishes such as carpaccio—allowing the sake and food to elevate one another beautifully.

Brewer Yumiko Kodama, who led this sake, has a special affection for Omachi rice because it expresses complex flavors, a soft rounded texture, and a charmingly long finish when brewed as undiluted genshu.
