This is a Junmai sake that delivers a rich aroma and sweetness.
Made exclusively with 100% contract-cultivated Yamada Nishiki from Sakai City, it is brewed using Association Yeast No.1801 and HiG koji with Ginjo-style methods, resulting in a sake that showcases an elegant fragrance, gentle sweetness, and a full-bodied umami depth.
From 2025, the brewery introduced a rapid-cooling plate heat exchanger, allowing the sake to be cooled to room temperature within about five minutes after pasteurization, significantly improving the quality of their pasteurized sake.
