This dry-style Junmai Ginjo from the Shichisui Limited Series was specifically crafted as a food-friendly sake designed to complement meals rather than overpower them. The brewery behind this release, Toraya Honten, was founded in 1788 during the Tenmei era by merchants from Omi who established their brewing operations in Utsunomiya. Drawing water from one of Utsunomiya's famed Seven Great Springs, they created the foundation for what would later become the Shichisui brand. Guided by the philosophy of crafting "sake that inspires and excites," the brewery continues to embrace a spirit of "Challenge & Change," constantly exploring new possibilities while highlighting the unique characteristics of different sake rice varieties. Through the careful balance of rice-derived umami and acidity, Shichisui continues to produce innovative and evolving expressions of modern sake.
