After maturing throughout the summer, the sake builds upon Senchuhassaku’s signature light and refreshing character with gentle, pleasant sweetness and the rounded maturity distinctive of “Hiyaoroshi.” On the palate, a fruit-forward sweetness reminiscent of orange emerges first, followed by vivid acidity and the sharp, clean finish characteristic of an extra-dry sake, leaving a firm and clearly defined dry aftertaste. While offering the soft depth gained through maturation, it retains the refreshing crispness that defines Senchuhassaku. It pairs particularly well with rich, oily fish dishes, especially seasonal autumn favorites such as bonito and Pacific saury, making it an excellent limited release for enjoying as an autumn food-pairing sake.
This autumn-limited “Hiyaoroshi” comes from Kochi’s popular “Senchuhassaku” label. It carries forward the brand’s long-established and much-loved extra-dry Junmai style, combining a crisp, dry character with the distinctive umami of the rice.
