Unlike the Arabashiri portion, this sake shows virtually no pronounced effervescence. On the palate, gentle sweetness and a smooth, silky texture take center stage, creating a rounded and approachable drinking experience. The interplay of multiple yeast strains brings richness and complexity while maintaining excellent harmony. With its relatively accessible price point, this sake offers an easy and enjoyable way to experience both the distinctive character of Sakuyabi and the appeal of a multi-yeast assemblage.
This sake is created by blending the “Seme,” or final pressing portions, from four different expressions in the “Sakuyabi” series, each brewed with a different yeast strain: Kyokai No. 1801, 901, 1401, and 701. After each sake is pressed separately, the brewery carefully combines them through an assemblage. The overall profile is led most prominently by the character of No. 1801 yeast, while the distinctive expressions of No. 701 and No. 901 can also be perceived, ultimately coming together in Sakuyabi’s signature gorgeous and fruit-forward style.
