The aroma is calm and understated, while the palate reveals a clean, unadulterated rice umami, neatly brought together by a well-balanced acidity. This results in a sake that is exceptionally well-suited as a food-pairing companion. It is brewed with the intention of expressing gratitude for nature’s blessings and praying for renewal.

Made using the premium sake rice “Hitachi Nishiki” from Ibaraki Prefecture, polished to 60%, this is a Junmai Ginjo nama genshu that showcases both freshness and depth.

Since ancient times, Japan has nurtured a culture of prayer and harvest, rooted in the blessings of the four seasons and reverence for nature. Each year around Risshun (approximately February 17), shrines across the country hold prayer ceremonies for a bountiful harvest, while Seimei (April 5) marks the beginning of new growth and the preparation for rice planting. The “Hōjō Kigan-sai” (Harvest Prayer Festival) is held on this day to pray for a successful rice harvest—the essential ingredient of sake. For this special project, breweries craft unique expressions using locally grown sake rice and their finest techniques, resulting in a meaningful and limited creation worthy of careful appreciation.
