It undergoes neither sediment removal nor filtration, preserving as much of the rice’s natural, generous umami as possible. “Okunokami” was personally created by fourth-generation brewery owner Koji Tanaka with the ambition of introducing delicious sake brewed in Tokyo to people throughout Japan. The characters “屋守” are normally read as “Yamori,” but for this brand they are uniquely pronounced “Okunokami.” The name embodies the wish to “protect the home and protect the brewery,” reflecting the distinctive spirit behind this locally brewed Tokyo sake.
