After pouring into the glass, a sweet and elegant ginjo aroma reminiscent of melon and muscat grapes gently rises. This rice variety possesses excellent characteristics suitable for high polishing, allowing the production of sake with exceptional purity and minimal off-flavors, making it particularly well suited for Daiginjo-class brewing. The brewing water is sourced from the clear local spring “Kanezawa no Shimizu” in Hachinohe. Through the combination of a superior natural environment and meticulous handcraft brewing, the result is an exceptionally elegant and refined flavor profile.
