The opening retains Mutsu Hassen’s signature refreshing and gentle character, with the sake gliding lightly and smoothly across the palate. As it moves into the mid-palate, however, the flavors begin to expand in every direction, suddenly amplifying both depth and complexity and creating a distinctive sensation as though the center of gravity of the palate has momentarily entered a state of “zero gravity.”

Inspired by the traditional Edo-period brewing technique known as “Hashira Shochu,” this sake is brewed by adding the brewery’s own sake-lees shochu, distilled from sake lees, directly to the moromi, using an ancient method as the starting point for exploring an entirely new expression of Japanese sake. The name “Banyu Inryoku,” meaning “Universal Gravitation,” was inspired by the reunion and integration of two elements born from the same brewery—the moromi and sake-lees shochu—as though drawn together by the universal force that attracts all things. Through this innovative brewing experiment, the sake reveals a distinctive character unlike anything previously experienced, inviting drinkers to “observe” in the glass the flavor transformations created as these two elements merge. In addition to enjoying it neat, it can also be served as a Highball with soda water or On the Rocks, encouraging a freer approach beyond conventional sake drinking styles and allowing the different expressions of “Banyu Inryoku” to be explored.
