The Wataribune rice used in this sake is organically cultivated at Wakai Farm in Ryuo-cho, a farm long known for generations under the name “Kome-shi Matahachi.” In brewing, the kura employs the traditional Kimoto method, relying on the natural power of resident microorganisms within the brewery.
