This sake has a very gentle and subtle aroma, with a hint of apple and the fragrance of fruit. When tasted, you can feel the delicate flavor of the rice, as well as the fruity aroma of peaches and grapes that fill your mouth. 'Matsunotsukasa' has accumulated the techniques of Japanese sake making through its history, and this modern and elegant Daiginjo sake is the culmination of that expertise.

This sake uses 100% specially designated Yamadanishiki rice (produced in Higashijo-cho, Hyogo Prefecture), cultivated by Mr. Hidetaka Tanaka. We carefully bottled only the best-balanced part of the middle part of the 600 kg small-batch production.

'Ultimus' meaning 'fundamental' and 'ultimate' is the epitome of 'Matsunotsukasa,' which takes its name from 'Ultimus.'Typically, it takes over a year to age our Daiginjo sake, but we preserve the freshness of the new sake while maintaining its maturity, resulting in a unique flavor that you can indulge in.
