Kijoshu is a brewing method where part of the brewing water is replaced with sake. As a result, more sugars remain unfermented—normally consumed and transformed into alcohol by the yeast—giving the sake a richer, smoother, and sweeter profile. This style has drawn increasing attention in recent years as an emerging trend in sake.
This version is brewed with Fukui-grown Gohyakumangoku rice polished to 55%, and luxuriously uses the brewery’s signature “Kokuryu Itchorai Junmai Ginjo” in place of brewing water.
