In terms of aroma, both on the nose and on the palate it presents fresh citrus-driven notes. The acidity is sharp and the overall impression is on the dry side; after the initial burst of acidity, the texture turns smooth and rounded, completely free of harsh edges—much like drinking a glass of hassaku juice without any bitterness. At present, the sake is still in a youthful stage, allowing one to enjoy its clarity and refreshing, water-like quality, while also offering good versatility for warming.
“Koueigiku” introduces a brand-new release, “Yumihari,” a name meaning half moon, inspired by its shape and the sharpness felt when an arrow is released from a bow. It pursues a crisp, clean profile with a clearly defined finish, featuring citrus flavors reminiscent of low-sweetness hassaku, combined with Koueigiku’s signature clean and beautiful acidity, making it an excellent food-pairing sake. According to the brewery, while not flashy, its flavor gradually reveals itself over time, inspired by a lasting impression left by a Matsuyama Mitsui sake enjoyed 25 years ago. This rice variety had long been one they hoped to use, and through a fortunate opportunity it was specially adopted for this brew. In practice, the rice proved highly manageable, with grains resistant to cracking and slow, stable water absorption, demonstrating great potential as a sake rice.
