The aroma is rich and expressive, offering intense, ripe fruit notes reminiscent of melon. On the palate, deep and full-bodied sweetness unfolds with impressive richness, accented by gentle acidity that brings freshness and balance to the sweet profile. Combining the concentrated sweetness characteristic of Kijoshu with a vibrant fruit character, this special limited release marks Koshinohomare’s first exploration of the Kijoshu style.
“Koshinohomare Kiki Kijoshu,” released on September 3, 2026 in limited quantities, is Koshinohomare’s first attempt at creating a fresh-style Kijoshu brewed using Junmai sake as part of the brewing liquid. While conventional Japanese sake is brewed with water, rice, and rice koji, “Kijoshu” is produced by replacing part or all of the brewing water with sake, resulting in greater sweetness, richness, and distinctive depth. For Koshinohomare’s first Kijoshu, “Kiki,” a portion of the brewing water used during Junmai sake production is replaced with “Koshinohomare 90PINK Namazake,” creating a fresher and more fruit-forward expression.
