Brewed with Yamada Nishiki rice from Hyogo Prefecture and polished to 80%, it showcases the brewery's proprietary "Ikakitori" extraction method. Inspired by brewing techniques recorded in historical texts dating from the Muromachi to Edo periods, this method uses a basket-like filter submerged directly into the fermenting mash, allowing sake to flow out naturally with virtually no pressure and minimal oxygen exposure. By preserving the original character and freshness of the moromi to the greatest possible extent, the technique captures the pure essence of the fermentation. Following a long, low-temperature fermentation, the sake presents the unfiltered beauty of the mash directly in the glass, making it one of the brewery's most representative and distinctive creations.
