The aroma offers a fresh, apple-like fruit character that is gentle and inviting. On the palate, Kaze no Mori’s signature lively effervescence immediately emerges, accompanied by a soft and delicate texture. Rich aromatics then gradually unfold as rice-derived umami, gentle sweetness, and the mineral character of the brewing water intertwine to create a complex and multidimensional profile. From the mid-palate onward, a drier character begins to emerge, bringing greater clarity and definition to the overall flavor. The finish is light, comfortable, and clean, fading away with effortless precision. This rare limited-edition release fully reflects Kaze no Mori’s spirit of continuous evolution and experimentation while exploring the new potential of table rice cultivated in Nara.
Kaze no Mori Challenge Edition Hinohikari 507 is an experimental, one-time-only limited release from the highly acclaimed Kaze no Mori brand of Gose City, Nara Prefecture. Hinohikari is a variety developed by crossing Koshihikari with Koganebare and is also officially designated as a recommended cultivar in Nara, where it is widely grown.
