“HINOHIKARI 507 Manakadori Challenge Edition” is a limited release from the Challenge series by Kaze no Mori, the highly acclaimed brewery based in Gose City, Nara Prefecture. It is brewed with specially cultivated Hinohikari table rice grown in Nara Prefecture and polished to 50%, creating a one-time-only limited specification. The sake undergoes extended low-temperature fermentation and is collected using the brewery’s distinctive “Manakadori” method, in which only the middle portion that flows naturally under its own weight without additional pressure during pressing is bottled. This results in a purer, more delicate sake with a rounded and beautifully balanced mouthfeel. Hinohikari is a table rice variety developed from Koshihikari and Koganebare and is one of the major varieties promoted in Nara Prefecture. For this release, specially cultivated rice grown with at least 50% less agricultural chemicals and chemical fertilizers is used, reflecting a commitment to both environmental sustainability and reliable quality.
