The palate is crisp and lively, with bright yet gentle acidity and a clean, sharp finish, making this seasonal Junmai sake particularly well suited for enjoyment from early through midsummer. It pairs beautifully with Japanese dishes such as fried foods, grilled fish, and salt-seasoned sashimi, as well as Western dishes such as carpaccio and Caprese salad, enhancing the natural flavors of the ingredients. Best served well chilled, allowing the refreshing acidity and crisp character derived from white koji to fully express its invigorating summer appeal.
This Junmai sake is brewed using both yellow koji traditionally used for Ginjo sake and white koji, and is carefully fermented with the brewery’s own No. 8 house yeast preserved at the Kariho brewery. The white koji contributes a refreshing citrus-like acidity, which is beautifully balanced by a moderate and gentle sweetness, creating a crisp yet layered flavor profile.
