This sake is brewed using 100% “Yukimegami,” a newly developed premium sake rice from Yamagata Prefecture, delivering a perfect balance of rice aroma and sweetness, with moderate acidity providing freshness. The body is rich and concentrated, while the lingering finish and refined fruity aftertaste are truly impressive.
The overall taste is focused yet not cloying, with vivid fruit notes and a refreshing finish. It pairs well with sashimi, white fish, truffles, and light French cuisine, and also serves beautifully as an aperitif.
Crafted entirely from “Yukimegami,” a sake rice developed in Yamagata Prefecture over many years specifically for Daiginjo brewing.
