Upon entry, the scents of green apple and a hint of adhesive blend softly with a moderate fruit sweetness. While the body is enveloped in a creamy texture, it still retains a sense of transparency, making the sake light and comfortable.
Hakutsuru Nishiki is an excellent rice variety developed by Shiratsuru Sake Brewery, following approximately 70 years of re-breeding the mother strain "Yamada Ho" and the father strain "Watarai." After careful selection and cultivation each year, Hakutsuru Nishiki successfully debuted in 2007 as a sibling variety of Yamada Nishiki.
