As a new dry Junmai sake created for the 2025 brewing year, this release fully showcases the brewery’s signature use of ultra-soft water. It enters the palate with a smooth and pure texture, offering a refreshing body free from distracting flavors and finishing clean, crisp, and precise. Combining an elegant aroma, invigorating dryness, and excellent food-pairing versatility, this sake represents a new generation of Kyoto-style Junmai Daikarakuchi.
This Junmai Daikarakuchi is brewed in small batches using “Iwai,” Kyoto’s renowned sake-brewing rice, polished to 65%. After pressing, the sake is bottled as undiluted genshu without filtration or added water. Each bottle is then individually pasteurized using the bin-kan hiire method and carefully stored under strictly controlled low-temperature refrigeration, preserving its delicate flavors and freshness. Following the previous version brewed with Kyokai No. 7 yeast, this release uses Kyokai No. 10 yeast, producing a more elegant and refined aromatic profile while maintaining a distinctly crisp and dry finish.
