
The deliciousness of Hakutsuru Nishiki sake concentrates on its sweetness, similar to the original Hakutsuru Nishiki and Yamada Nishiki characteristics. However, it has fewer amino acids and premium alcohol, resulting in a milder taste. It is as juicy as ever, leaving a lingering and endless aftertaste.
Hakutsuru Nishiki, like Yamada Nishiki, is a "sibling variety" with the mother being "Yamada Ho" and the father being "Watase." Hakutsuru Shuzo selected and registered this rice variety after nine years of repeated selection from 800 candidates in 2007. While there are many rice varieties completed with Yamada Nishiki as the parent, it was challenging to produce rice that surpasses Yamada Nishiki. Hence, a crossbreeding was conducted to obtain a sibling variety once again.
