This seasonal limited-edition release, "Iwai Tokubetsu Junmai Early Summer," showcases the brewery’s dedication to Kyoto's local terroir. Every ingredient is sourced from Kyoto, including the sake rice Iwai, a variety developed and cultivated within the prefecture, Kyoto's proprietary Kyo no Koto yeast, and the famous natural brewing water of Fushimi. The result is a sake that fully expresses the character and identity of Kyoto.
