Upon tasting, there are refined pear and melon-like aromas, accompanied by a distinct sweetness, serene texture, and a smooth, composed mouthfeel, leaving behind a delicate and elegant aftertaste. The meticulous polishing process brings about a corresponding sense of lightness and a superb quality derived from the gentle pressing of the sake lees. Hence, the name "Nobirumente."
"Nobilmente" is a musical term, signifying "noble, elegant, and distinguished." This name was bestowed upon this premium product following the "Isojiman Nakadori Junmai Daiginjo 35 Vintage" and "Isojiman Nakadori Junmai Daiginjo 35 Adagio." In May 2016, at the G7 Sherpa meeting in Ise-Shima attended by representatives of seven advanced countries, "Isojiman Daiginjo 28 Nobilmente" was chosen as the celebratory sake for the banquet and received high praise.
