Ippakusuisei is known for its gentle and smooth aroma, which, while mild, exhibits a strong and intense juiciness upon drinking! Despite this, it maintains a fresh mouthfeel and gentle acidity, exuding an incredibly elegant taste. It is truly delicious, and an absolute must-try sake!
This is a 720 ml limited edition special product of Ippakusuisei! This sake is made from the Shinriki rice grown in Kumamoto Prefecture.
Shinriki rice had an output of only three bottles in the early Meiji period. After the diligent improvements made to its cultivation, it became widespread throughout the country and became renowned for its excellent harvest yields. Its characteristics of "easy production of koji, easy dissolution of mash, and minimal impact on impurities in sake" have also earned it high marks for use as sake rice. However, due to changes in rice planting practices and intense competition for varietal improvement in the early Showa period, Shinriki gradually disappeared. Half a century later, this "Mirage rice" has regained its status and has been recognized once again for its suitability in sake brewing.
