This sake features four distinctive wild plants carefully selected from Japan’s mountains and forests: Kuromoji fruit, offering a fresh lemongrass-like aroma; branches and leaves of the Japanese nutmeg-yew, with grapefruit-like citrus notes; fragrant Hanayomogi, whose intense aroma rivals that of Western herbs; and leaves of Aonokumatachiran, characterized by a ginger-like spiciness. These diverse botanical aromas intertwine harmoniously, giving the sake a refreshing, layered natural character while showcasing the unique appeal of Japan’s native forest plants.
This Craft Sake is a collaborative creation between Ine to Agave and the Japan Botanical Research Institute, developed under the concept of “turning Japan’s mountains and forests into true treasures.” Native Japanese plants are fermented together with rice and rice koji to explore new possibilities for incorporating wild forest botanicals into brewing. The Japan Botanical Research Institute has spent years exploring Japan’s mountains and forests, dedicated to discovering and enhancing the value of native plants. Its extensive research and practical work with natural resources served as a major inspiration for this collaboration.
