The rice used is “Hitogokochi,” cultivated by contracted farmers near the brewery, expressing a strong sense of local terroir. The overall aroma is fresh and slightly dry, while the palate is clear and pure—reminiscent of drinking clean water—delivering a refined and delicate impression with a refreshing, cooling sensation. It is a modern-style sake defined by its remarkable clarity and sharp, clean profile.
From the newly established Ilaka Brewery in Matsukawa Village, Nagano Prefecture, comes this new release. In pursuit of the ideal brewing water, the brewery chose this location in northern Azumino, where ultra-soft water with a hardness of just 7 is used, giving rise to its signature sake “Ginran.”
