Among the celebrated sakes brewed in Oyama City, Tochigi Prefecture under the name “Houou Biden,” the “Nikko ~NIKKO~” series was born from gratitude and reverence for the nature and pristine water of Nikko, the brewery’s water source. Its pinnacle expression, “Junmai Daiginjo Mikumari,” now makes its official appearance. “Mikumari” refers to the deity who governs water sources and the distribution of flowing water, traditionally enshrined at important springs and watershed sites since ancient times.
This special Houou Biden bearing the name of a deity is brewed using the sake rice “Yume Sasara,” nurtured by Nikko’s magnificent nature and water, polished to an exceptional 25%—the highest polishing ratio not only within the Nikko series but in the entire history of Houou Biden. Using the soft and delicate sacred water drawn from Kobayashi Shuzo’s own Nikko water source and brewed slowly with the traditional kimoto method, it is an ultimate and exceedingly rare masterpiece.
