The aroma is fresh and vibrant, reminiscent of freshly squeezed grapefruit, accompanied by a delicate and refreshing natural effervescence. On the palate, the organically cultivated rice delivers a deep yet pure umami character, while fruitiness, acidity, and savory rice flavors intertwine in layers. The result is a refreshing yet remarkably complex profile that showcases the exceptional craftsmanship of modern Japanese sake brewing.
“Hiran W.Adams” is a special sake brewed entirely with 100% organically cultivated rice, using a blend of 20% Yamada Nishiki and 80% Asahi rice. To fully express the natural character of the rice, the kake-mai is polished to 77%. It is carefully brewed using Kyokai No. 7 yeast together with the brewery’s traditional Kimoto method. The brewery employs a gentle and delicate pressing process to preserve the sake’s fine natural effervescence, giving it both a lively freshness and an elegant mouthfeel.
The name “W.Adams” comes from the English navigator William Adams, known in Japanese history as Miura Anjin. After an arduous voyage, he arrived in Japan in 1600 and gained the trust of Tokugawa Ieyasu, serving as a diplomatic advisor and making significant contributions to the development of navigation and shipbuilding. In his later years, he settled in Hirado City, Nagasaki Prefecture, where the Hiran brewery is located, married a Japanese woman, and spent the remainder of his life there. Naming this sake after him not only pays tribute to an important historical figure who connected Eastern and Western cultures, but also symbolizes Hirado’s rich heritage as an international port and center of cultural exchange. Beyond its exceptional flavor, the sake carries a compelling historical narrative and commemorative significance.
