The Queen series was born from the pursuit of unlocking the full potential of the table-rice variety Nikomaru. Because table rice is rarely used for Ginjo-class sake brewing, the brewery chose an extraordinary polishing ratio of 25% for the kake rice—a playful reference to the pronunciation of "Niko" (25) and "maru." This level of polishing surpasses that of many conventional Daiginjo sake. For the Regal Edition, only naturally free-run sake is collected without applying pressure during pressing. By avoiding mechanical pressure, excess amino acids are not extracted, resulting in an exceptionally pure, transparent, and refined flavor profile.
