In selecting the rice, they choose "Misato-nishiki," a sake rice grown in Akita prefecture polished to 50%, using "Rikisu" from the Kurikoma mountain range as the brewing water. The unique low-temperature, long-term brewing method is used to preserve the fascinating flavor of the sake. Each bottle is carefully hand-filled immediately after pressing and undergoes only one pasteurization.
