Brewed with the Yamagata sake rice “Dewanosato,” it showcases the clear umami characteristic of low-protein rice, combined with the crisp, charming finish brought by Kyokai No.6 yeast, resulting in a refreshing and well-layered palate.
Fuji Shuzo, founded in 1778 in Yamagata Prefecture and deeply connected to the legendary tiger-slaying warlord Kato Kiyomasa, carries the brewing heritage of this region where sake-making thrives. The brewery draws upon the waters originating from Mount Gassan, the main peak of the sacred Dewa Sanzan mountains—long revered as a spiritual training ground—preserving centuries of natural memory within its brewing.
The new brand “Kyomei” was born from the desire to infuse all of these origins and spirit directly into the sake itself.
Across countless ages, the natural cycle nurtured by the blessings of heaven continues under the care of the mountains.
