Combining three premium sake rice varieties that could each serve as the star of a brew is virtually unheard of. For Eiko Fuji, this marks the first time three different rice varieties have been used together in a single release, and it may well be an industry first. Because each rice variety possesses such a distinct personality, achieving harmony is extraordinarily difficult; even a slight imbalance could easily disrupt the overall profile. This makes the project an exceptionally ambitious piece of sake design. The fact that this concept was successfully realized is a testament to the brewery’s outstanding brewing expertise and meticulous blending and formulation skills.
