This sake is a Junmai Ginjo made from the rice variety "Hanaomoi" polished to 50%. After collecting the sake pressed in the spring, it undergoes low-temperature maturation. By maturing at low temperatures until autumn, it acquires a smooth, delicate, and delicious taste, achieving a well-balanced and juicy freshness in the mouth. The strong amino acid flavor is balanced with the fruity aroma, creating a perfect harmony. Fresh carbon dioxide is infused, giving it a clear and transparent quality.

In order to create the next generation of rice that surpasses the rice king "Yamada Nishiki," a mixture of Aomori Prefecture's rice varieties "Hanafubuki" and "Yamada Nishiki" is used, resulting in Aomori's premium sake-appropriate rice "Hanaomoi." Although the official name of the rice variety is "Hanaomoi," it was referred to as "Aoji Shu 140" in the local area before it was officially approved in Heisei 14. Perhaps because of this, the sake is named "Hyakuyonju" (which means "one hundred forty"). The label features a red maple theme, providing a unique and autumnal atmosphere.
