The taste is exceptionally light and refreshing, flowing smoothly as if immersed in a clear stream. Upon the first sip, a graceful honey-like sweetness emerges, clean and velvety, with a lingering aftertaste.
This sake is meticulously crafted through a total of 168 hours of polishing time, where the sake rice "Yamadanishiki" is polished down to 23%. It is said that if the polishing ratio were increased by just 1%, the rice grains would break and become unsuitable for brewing. Therefore, 23% is the pinnacle of Asahi Shuzo's craftsmanship.
