
Made using Yamada Nishiki rice cultivated under a special contract in Area A of Hyogo Prefecture, Born Wing of Japan Junmai Daiginjo is matured for about two years at a temperature below 0°C. Only before being stored for bottling, the polished rice is blended in a 1:1 ratio, combining Junmai Daiginjo sake with a polishing ratio of 20% and Junmai Daiginjo sake with a polishing ratio of 35%. The result is a very refreshing sake with a mild and gentle aroma.
