At room temperature, the sake displays a composed and refined character. When gently warmed, the distinctive flavor of buckwheat and its soft, slightly viscous texture unfold even further, creating a warm and delicate mouthfeel reminiscent of “Sobayu,” the hot buckwheat water traditionally served with soba noodles. Particularly well suited to Japanese cuisine, it integrates naturally into the dining experience without overpowering the flavors of the food. Each tasting offers the intriguing sensation of discovering something that feels as though it should have always existed, yet has never been encountered before. This is a distinctly Japanese-style “Craft SAKE” that uses buckwheat to explore new possibilities for SAKE at the everyday dining table.
Recommended Pairings: Chikuzen-ni, Oden, Kabayaki Eel, Teriyaki Chicken, Warabi Mochi, and Dashi-wari (SAKE mixed with dashi broth).
“Linné 800 (YAO) Soba” is a distinctive creation from Linné, founded by Mr. Imai, who previously worked with Aramasa and WAKAZE. Carefully brewed with rice and buckwheat koji, it presents an unprecedented Japanese-inspired style of Craft SAKE. The sake is brewed at Choryo Shuzo in Yao, Osaka Prefecture, using organically cultivated buckwheat from Ojiya, Niigata Prefecture, which is transformed into “buckwheat koji” for brewing. The rice is polished to 60%, drawing out a clear and transparent sweetness, while the flavor profile is deliberately designed with a sense of restraint, preventing the rice character from becoming overly prominent and allowing the rich, distinctive aromas and flavors of the buckwheat itself to emerge more clearly.
